So that non-users can sign a document. We regularly have contractors that sometimes only visit for a couple of days and it isn't feasible to get them onboarded onto the system, or they don't have an appropriate device for the app, so they want to sign on the Site Manager's device but they can't as their name won't be on the list. Suggest either 1) adding an 'other' option after all the names on the list to free type a name when selecting the user to sign, or 2) creating a completely new question type that is a basic signature box and text box?

You can already do this as long as any existing user is already signed in on the app.
When clicking a signature box, the details will default to the currently signed in user, but you can change this.
2 Options:
If the contractor works for an organisation already assigned to the Project, you can just add a new person against the organisation.
Click the Signature Box > Scroll up to the + icon > Choose the Organisation from the dropdown > Add your New User's Name & Job Title > Sign.
Workaround Idea if the contractor works for an organisation NOT assigned to the Project, you could pre-assign an Organisation called "Other" to all your projects to handle these cases.
Click the Signature Box > Scroll up to the + icon > Choose the Organisation called "Other" from the dropdown > Add your New User's Name > When Entering the Job Title also include the Real Organisation Name after the Title > Sign.
